After nearly a decade of being vegetarian, I discovered I had hypothyroidism and a host of vitamin deficiencies. I needed to rethink my diet, and after trying out different variations I settled on Pegan.
The transition was challenging at first because I had to learn a whole new way of approaching food and cooking. But it was all worthwhile. My health has steadily improved, and I’ve discovered so many wonderful recipes along the way. I’m sharing my favorites on this blog in the hope that anyone else in the same boat will find encouragement from my story.
